Summer months bring the giant bluefin tuna to the shores of Nova Scotia. They follow schools of mackeral and herring in warming waters where they feed. As their fat content increases, they become a prime seafood product to Japan as sushimi.

         The bluefin is caught by tended line and immediately iced at sea and brought to shore where they are chilled in a prepared slush of ice and water. Next the fish are carefully placed in specially designed shipping boxes and sent by air cargo to Japanese auction houses.

         The value of the giant bluefin is then determined according to fat content and overall quality standards such as size, colour, etc.. Market conditions are factored in to determine the price.

         Fishermen from all over Eastern Canada converge on our fishing grounds, expecting high returns for their efforts to catch these elusive fish.
