F. Thibault Seafoods Inc. -- Lobster

Located in South Western Nova Scotia, we are best known as suppliers of Live Lobster and fresh Bluefin Tuna. Over the past three years we have been diversifying our product line with the introduction of Live Rock Crab. These products are being shipped to markets in the United States, Europe and Japan.

We are pleased to present our newest product for the discriminating market, Pre-Cooked Lobster. We use only the freshest Live Nova Scotia Lobster. They are partially cooked then vacuum packed and quick frozen by means of an ultra fast submersion process. This makes for a product that retains all of it’s original juices and flavor.

This quick frozen vacuum packed product offers many advantages.

Freezing occurs without crystallization therefore no dehydration.
Very resistant to freezer burn hence long shelf life.
Microwave heating completes the cooking process rather than just re-heating, giving fresh from the pot aroma and taste.
Juice is not lost from the product during thawing allowing for a moist meat.
Product requires no further preparation prior to serving.

As part of our marketing strategy we will produce this product to meet the needs of our clients. It is not our intention to maintain an inventory but rather to produce as ordered by our clients, therefore delivering the freshest possible lobster to your clients. We would be pleased to customize our production to meet your requirements.

We can also prepare Rock Crab by this process. This produces a high quality, low price, fresh tasting shellfish. Rock Crab lends itself particularly well to Boil-in-Bag cooking.
